In San Felice the unfolding of the
seasons dictates the rhythm of work in the countryside. The synopsis that
follows is a summary of the work carried out during each individual month of the
year in relation to the growth phase of the main types of cultivation: vines and
olives.
This is a continuous working progression that doesn't allow for delays, and that
often deals with adverse weather conditions. It is however, the only real way of
guaranteeing the attainment of raw materials that are healthy and balanced as
far as their analytical and organoleptic components are concerned.
Later, in the cellar or in the wine press one only has to take care not to
damage that which Nature has provided.
