Tobermory
Distillery, where Tobermory Single Malt Scotch whiskies are produced, is the
only distillery on the Isle of Mull. It receives its water from a private
reservoir on top of a hill. The water travels one mile to the distillery. Peat
is abundant in the stream. Before the water enters the distillery it is filtered
through sand. Because the peat is so plentiful, the malt and barely for
Tobermory is indirectly dried with gas heat rather that over peat fires. This
reduces the peat overtones in the whiskey. The peat found in indirectly dried
Scotches only comes from the water source. Both whiskies are double distilled in
their own distinct "S" necked potsills. The pipes serve to condense the purest
part of the vapor into a clean spirit. Tobermory are aged in charred, American
oak Bourbon cask. The carbon in the charred oak attracts any impurities left in
the spirit, further purifying the whiskey, and imparting it's rich amber color
and enhancing it's character and aroma.
