The recipe that has been created by the Trappist Fathers has given connoisseurs the enjoyment of the traditional beers from Koningshoeven Trappist ale for more than the last hundred years. Our brewing methods require nothing less than pure and natural ingredients: hops, barley malt, yeast and water from our own spring. Fermentation occurs using a yeast type that is most active at a temperature between 18 and 20˚C. This process we call ‘top fermentation’. The beer is then bottled along with yeast and sugar. The beer is then free to ferment in the bottle itself, and it is here that it develops its unique aroma. Both taste and smell are allowed to develop over the fullness of time. And the superb result is Koningshoeven Trappist ale: an authentic Trappist beer. The Trappist fathers are themselves no longer employed in the brewery, but they do keep a close eye on the brewing process and are the owners of the trademark Koningshoeven Trappist ale.
