Total cultivation is about 20 hectares (50 acres) of vineyards yielding between 240 and 250 metric tons of grapes per year, 90% of which is Moscato d'Asti. As the demand for their wines grew, they felt it necessary to begin contracting selected estates for their crops on a yearly basis. They still personally crush the grapes and complete the wine-making process until they have achieved the quality and perfection required by their clients.

 The charmat method, the natural fermentation system is used in making their Spumante Stainless steel tanks are utilized which are controlled thermostatically for a slow and cool fermentation to keep the fruitiness and sweetness of the product alive and fresh. Also used is a double filtration system with the microsystem equipment in order to guarantee the freshness, aroma, and taste of the Moscato grape varietals that is appreciated and known word wide.

Abbazia di S. Gaudenzio specializes in the production of wines from the Piedmont region such as Asti, Moscato d'Asti, Malvasia, Pinot, Barbera, Dolcetto, Grignolino, Gavi, Brachetto, and Freisa. Wines low in alcohol and some Lambrusco are also bottled by the company.
